Not going to warp
Epoca and Ecolution are one in the same. If you look around, some searches refer to this as just Epoca Symphony Cookware set.
I wanted these pans because they are PFOA free. I looked into the new ceramic coatings that are PFOA free but time and time again people complain the food sticks.
I went to the Ecolution website and read that the pans come in 4 grades. Most of the pans at Amazon are the Artistry grade. The bottoms are aluminum and you risk warping. The Symphony grade is their top of the line and the bottom is stainless steel. It works with induction, gas, ceramic, etc. and the stainless steel isn't going to warp.
The non stick coating on these pans is fabulous. I made egg whites and spinach this morning without any oil/butter and I can't believe how nothing stuck! I'm thrilled with this set! Now I need to get a bigger fry pan like the 11 inch which unfortunately is sold separately.
