BonJour Copper Clad 4-Quart Covered Dutch Oven



Heavier than All-Clad, take slightly longer to heat, hold heat longer.
Let me say this first, we have an All-Clad Copper Clad, 4 1/2 Qt, BonJour is 4 Qt, so they are not exactly the same. Without cover: All-Clad weights 3.15 lbs, BonJour is 5.4 lbs. We look at copper layer, the thickness are very similar. So we think the extra weight of BonJour is the result of thicker steel or albumin. The law of physic, the heavier the mass, the longer to heat up, but hold heat longer. To be honest, both Copper Clad don't cook that much different.
Many you may wonder, does it worth to pay more for Copper Clad? If you have gas stove, Copper Clad cooks only somewhat better, faster than regular Stainless Steel Clad. For Glass Top stove and Induction stove, the difference between Copper Clad and Stainless Steel is easily noticeable; we even feel, Copper Clad makes Induction cooking almost as good as Gas stove. If quick fire cooking is important to you, Copper Clad does big help; other kind of cooking, Stainless Steel may take longer, but you can save your money.

Didn't know good cookware could make this much of a difference
This is my first copper clad cookware. I have a few friends who had invested in clad software (they purchased All Clad) and raved about how good it is. I trust all of these magnificent cooks so I decided to take the plunge and buy a piece of clad software. I ran into a great sale on this particular piece of Bonjour and decided to purchase it.

This piece, the 4 Quart Covered Dutch Oven is 10" wide and only 4" high so I use it like a frying pan and a dutch oven.

I had no idea that great cookware could make so much of a difference. I can caramelize onions in half the time it took in my old pan (which was not bad, Cuisanart, just not great). You can use a little higher heat and the whole pan gets hot, even on a smaller burner.

And... it cleans up easier than my other cookware.

I am so in love with this cookware. Can't wait till I save up for more pieces.
